Vanilla Panna Cotta with Berry Coulis

Ingredients:

  • 2 cups (480 ml) heavy cream

  • 1 cup (240 ml) whole milk

  • ½ cup (100 g) granulated sugar

  • 2 ¼ teaspoons (1 packet / 7 g) unflavored powdered gelatin

  • 3 tablespoons cold water

  • 1 tablespoon pure vanilla extract(or 1 whole vanilla bean, split and scraped)

  • Pinch of salt

Instructions:

1️⃣ Bloom the gelatin. In a small bowl, sprinkle gelatin over cold water. Let sit 5–10 minutes until spongy.

2️⃣ Heat the dairy mixture. In a saucepan over medium heat, combine heavy cream, milk, sugar, salt, and vanilla (if using vanilla bean, add pod and seeds now).Heat until steaming and sugar dissolves — do not boil.

3️⃣ Add gelatin. Remove from heat. Remove vanilla pod if used. Whisk in bloomed gelatin until fully dissolved.

4️⃣ Strain (optional but recommended) Pour mixture through a fine mesh sieve for ultra-smooth texture.

5️⃣ Pour & chill. Divide into serving glasses or ramekins. Refrigerate at least 4 hours (or overnight) until set.




Berry Coulis

Ingredients:

  • 2 cups (250 g) fresh or frozen mixed berries (strawberries, raspberries, blueberries)

  • ¼ cup (50 g) sugar

  • 1 tablespoon lemon juice

  • 1–2 tablespoons water (if needed)


Instructions:

1️⃣ Cook berries. In a saucepan over medium heat, combine berries, sugar, and lemon juice. Cook 5–7 minutes until berries break down and release juices.

2️⃣ Cool the berry coulis before assembling the rest of the dessert.


Assembly


1️⃣ Check the Set

Gently jiggle the glass. The panna cotta should wobble slightly but feel firm on top. If it’s still soft in the center, refrigerate longer.

2️⃣ Stir the Coulis

Give your triple berry coulis a gentle stir.If it’s too thick, thin with 1–2 teaspoons cold water or lemon juice.If too thin, chill 15–20 minutes to thicken slightly.

Ideal consistency: Pourable but not watery — similar to maple syrup.

3️⃣ Spoon Over Gently

  • Hold a spoon just above the surface.

  • Pour the coulis over the back of the spoon so it floats gently onto the panna cotta.

  • This prevents dents or mixing.

For 4–5 oz glasses: Use about 1–2 tablespoons per serving.

4️⃣ Smooth the Surface

Gently tilt the glass in a circular motion to spread evenly if needed. Do not shake.

5️⃣ Chill Again

Return to refrigerator for 30–60 minutes to allow the coulis to slightly set and adhere to the surface.
