Almond Date Bars with Chocolate Hard Top
Makes: 9–12 bars
Ingredients
Date Layer
2 cups pitted dates (Medjool preferred)
2 tbsp water (as needed for blending)
2 tbsp chia seeds
1/2 tsp vanilla extract
Pinch of salt
Almond Base
1 1/2 cups almond flour
1/3 cup almond butter
2 tbsp maple syrup or honey (optional, dates may be sweet enough)
1 tbsp coconut oil, melted
Pinch of salt
Chocolate Hard Top
1 cup dark chocolate chips (dairy-free if desired)
1 tbsp coconut oil
Instructions
1. Prepare the Date Layer
Add dates, water, vanilla, and salt to a food processor.
Blend until smooth and thick.
Stir in chia seeds by hand.
Set aside to thicken for 5–10 minutes.
2. Make the Almond Base
In a bowl, mix:
Almond flour
Almond butter
Coconut oil
Maple syrup (if using)
Salt
Press firmly into a parchment-lined 8x8 pan.
Chill in fridge for 10 minutes to set.
3. Assemble
Spread the date mixture evenly over the almond base.
Smooth the top with a spatula.
4. Add Chocolate Hard Top
Melt chocolate chips and coconut oil together (microwave in 20-second bursts or double boiler).
Pour over date layer and spread evenly.
5. Chill & Slice
Refrigerate for 30–45 minutes, until chocolate is fully set.
Lift out using parchment and cut into bars with a sharp knife.
Storage
Store in an airtight container:
Fridge: up to 7 days
Freezer: up to 2 months
These bars came together during one of those weeknight moments when I was packing school lunches and realizing how hard it is to find something that feels like a treat but still fuels my kids. I wanted an option that wasn’t loaded with artificial ingredients or sugar spikes — something wholesome, filling, and made with ingredients I could trust.
Dates for natural sweetness, almond butter and almond flour for staying power, chia seeds for a little extra goodness — and just enough chocolate on top to make them feel special. The kind of snack that makes kids excited to open their lunchbox, but lets me feel good knowing they’re getting real food.
What started as a simple solution for school lunches quickly became a household favorite — proof that healthy can still feel like comfort, and that the best recipes often come from taking care of the people we love most.
